Christmas Island Prawn Laksa is a delicious and spicy noodle soup that is a popular dish in Christmas Island cuisine. It is made with a flavorful coconut milk broth, fresh prawns, and a variety of aromatic spices.
Ingredients
- 400g fresh prawns, peeled and deveined
- 200g rice vermicelli noodles
- 400ml coconut milk
- 4 cups chicken or vegetable broth
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 red chilies, thinly sliced
- 1 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 cup bean sprouts
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and red chilies. Cook for 2-3 minutes until the onions are soft.
- Add the curry powder and cook for another minute, stirring constantly.
- Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer.
- Add the fish sauce and brown sugar. Stir to combine and let it simmer for 10 minutes.
- Add the prawns and cook for 3-4 minutes until they turn pink and opaque.
- Cook the rice vermicelli noodles according to the package instructions. Drain and divide among serving bowls.
- Ladle the prawn laksa over the noodles. Top with bean sprouts and fresh cilantro.
- Serve with lime wedges on the side.
