Christmas Island Prawn Laksa

Ingredients

  • 400g fresh prawns, peeled and deveined
  • 200g rice vermicelli noodles
  • 400ml coconut milk
  • 4 cups chicken or vegetable broth
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 red chilies, thinly sliced
  • 1 tbsp curry powder
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and red chilies. Cook for 2-3 minutes until the onions are soft.
  2. Add the curry powder and cook for another minute, stirring constantly.
  3. Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer.
  4. Add the fish sauce and brown sugar. Stir to combine and let it simmer for 10 minutes.
  5. Add the prawns and cook for 3-4 minutes until they turn pink and opaque.
  6. Cook the rice vermicelli noodles according to the package instructions. Drain and divide among serving bowls.
  7. Ladle the prawn laksa over the noodles. Top with bean sprouts and fresh cilantro.
  8. Serve with lime wedges on the side.
