Ingredients
- 1 1/2 cups Arborio rice
- 1 pound jumbo shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1 pound clams, scrubbed
- 1/2 pound chorizo sausage, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 4 cups chicken broth
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
- Salt and pepper to taste
Instructions
- In a paella pan or large skillet, heat some olive oil over medium heat. Add the chorizo and cook until browned. Remove from the pan and set aside.
- Add the onion, garlic, and bell pepper to the pan and sauté until softened.
- Stir in the rice, saffron, and smoked paprika, and cook for a few minutes.
- Pour in the chicken broth and bring to a simmer. Cook for about 10 minutes.
- Add the shrimp, mussels, clams, and cooked chorizo to the pan. Cover and cook for another 10-15 minutes, or until the seafood is cooked through and the rice is tender.
