Christmas Island Seafood Paella

Ingredients

  • 1 1/2 cups Arborio rice
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 pound mussels, cleaned and debearded
  • 1 pound clams, scrubbed
  • 1/2 pound chorizo sausage, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced

  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a paella pan or large skillet, heat some olive oil over medium heat. Add the chorizo and cook until browned. Remove from the pan and set aside.
  2. Add the onion, garlic, and bell pepper to the pan and sauté until softened.
