Christmas Muffins

Ingredients
- 2 cups all-purpose flour

- 1/2 cup unsweetened applesauce

Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, mix the applesauce, vegetable oil, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the dried cranberries and chopped pecans.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
