Chun Juan, also known as Crispy Manchu Spring Rolls, is a popular dish in Manchu cuisine. These delicious spring rolls are filled with a savory mixture and deep-fried to crispy perfection.
Ingredients
- 12 spring roll wrappers
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts
- 1 cup cooked and shredded chicken (optional for non-vegetarian version)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, mix together the cabbage, carrots, bean sprouts, and chicken (if using).
- In a small bowl, combine the soy sauce, oyster sauce, sesame oil, garlic, and black pepper. Pour this mixture over the vegetable and chicken mixture, and toss to combine.
- Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon 2-3 tablespoons of the filling onto the bottom third of the wrapper. Fold the bottom corner over the filling, then fold in the side corners, and roll up tightly.
- Heat the vegetable oil in a large pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
- Serve the Chun Juan hot with your favorite dipping sauce.
