Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1 cup cooked and shredded chicken (optional for non-vegetarian version)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the cabbage, carrots, bean sprouts, and chicken (if using).
  2. In a small bowl, combine the soy sauce, oyster sauce, sesame oil, garlic, and black pepper. Pour this mixture over the vegetable and chicken mixture, and toss to combine.
  3. Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon 2-3 tablespoons of the filling onto the bottom third of the wrapper. Fold the bottom corner over the filling, then fold in the side corners, and roll up tightly.
  4. Heat the vegetable oil in a large pan over medium heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
  5. Serve the Chun Juan hot with your favorite dipping sauce.
