Chuño Croquettes

Ingredients
- 2 cups chuño, rehydrated and mashed
- 1/2 cup onion, finely chopped
- 1/4 cup parsley, chopped
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 cup bread crumbs
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl, mix the rehydrated and mashed chuño with the chopped onion, parsley, cumin, paprika, salt, and pepper.
- Form the chuño mixture into small croquettes, about 2 inches long.
- Dip each croquette into the beaten eggs, then coat with bread crumbs.
- In a pan, heat oil over medium heat. Fry the croquettes until golden brown and crispy on all sides.
- Remove the croquettes from the pan and place them on a paper towel to drain excess oil.
- Serve the chuño croquettes hot and enjoy!
