Chuño Croquettes

Ingredients

  • 2 cups chuño, rehydrated and mashed
  • 1/2 cup onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 cup bread crumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the rehydrated and mashed chuño with the chopped onion, parsley, cumin, paprika, salt, and pepper.
  2. Form the chuño mixture into small croquettes, about 2 inches long.
  3. Dip each croquette into the beaten eggs, then coat with bread crumbs.
  4. In a pan, heat oil over medium heat. Fry the croquettes until golden brown and crispy on all sides.
  5. Remove the croquettes from the pan and place them on a paper towel to drain excess oil.
  6. Serve the chuño croquettes hot and enjoy!
