Chura Gerteh (savory Oyster Stir-fry)

Ingredients

  • 2 lbs fresh oysters, shucked
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 hot pepper, finely chopped
  • 1/2 cup vegetable oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion, minced garlic, grated ginger, and hot pepper to the pan. Sauté until the onions are translucent.
  3. Add the diced tomatoes, ground cumin, and ground coriander to the pan. Cook for 5 minutes, stirring occasionally.
  4. Add the shucked oysters to the pan and stir-fry for 8-10 minutes, or until the oysters are cooked through.
  5. Season with salt and pepper to taste.
  6. Remove from heat and serve hot.
