Chura Gerteh (savory Oyster Stir-fry)

Ingredients
- 2 lbs fresh oysters, shucked
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 hot pepper, finely chopped
- 1/2 cup vegetable oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, grated ginger, and hot pepper to the pan. Sauté until the onions are translucent.
- Add the diced tomatoes, ground cumin, and ground coriander to the pan. Cook for 5 minutes, stirring occasionally.
- Add the shucked oysters to the pan and stir-fry for 8-10 minutes, or until the oysters are cooked through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
