Churpi Biscuits (tibetan Butter Tea Cookies)
Churpi Biscuits, also known as Tibetan Butter Tea Cookies, are a traditional delicacy from Sikkimese Cuisine. These rich and buttery biscuits are the perfect accompaniment to a warm cup of butter tea.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
Instructions
- Cream together the softened butter and powdered sugar in a mixing bowl.
- Sift the all-purpose flour and salt into the bowl with the butter-sugar mixture.
- Knead the mixture into a smooth dough, then wrap it in plastic and refrigerate for 15 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface to 1/4 inch thickness, then use cookie cutters to cut out biscuits.
- Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until the edges are golden brown.
- Allow the biscuits to cool on a wire rack before serving.
