Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1 cup white vinegar
  • 1 cup brown sugar
  • 1/2 cup raisins
  • 1/4 cup finely chopped ginger
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt

Instructions

  1. In a large saucepan, combine all the ingredients.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 25-30 minutes, stirring occasionally, until the chutney has thickened.
  3. Remove from heat and let the chutney cool to room temperature.
