Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1 cup sugar
  • 1 cup vinegar
  • 1/2 cup raisins
  • 1/2 cup chopped onions
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. In a large pot, combine all the ingredients.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30 minutes, stirring occasionally, until the chutney thickens.
  3. Remove from heat and let it cool to room temperature.
  4. Transfer the chutney to sterilized jars and store in the refrigerator.
