Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a large saucepan, combine the diced mangoes, sugar, vinegar, salt, ginger, cinnamon, and red pepper flakes.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Reduce the heat to low and simmer for 20-25 minutes, or until the chutney has thickened, stirring occasionally.
  4. Remove the chutney from the heat and let it cool to room temperature.
  5. Transfer the chutney to sterilized jars and store in the refrigerator.
