Chutni (malakal Mango Chutney)
Chutni, also known as Malakal Mango Chutney, is a popular condiment in South Sudanese cuisine. It is a sweet and tangy chutney made from ripe mangoes, sugar, and spices, and it pairs perfectly with savory dishes such as grilled meats and rice.
Ingredients
- 4 ripe mangoes, peeled and diced
- 1 cup sugar
- 1/2 cup vinegar
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon red pepper flakes
Instructions
- In a large saucepan, combine the diced mangoes, sugar, vinegar, salt, ginger, cinnamon, and red pepper flakes.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce the heat to low and simmer for 20-25 minutes, or until the chutney has thickened, stirring occasionally.
- Remove the chutney from the heat and let it cool to room temperature.
- Transfer the chutney to sterilized jars and store in the refrigerator.
