Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 cup coconut milk
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine coconut milk, garlic, ginger, soy sauce, brown sugar, lime juice, cumin, turmeric, cayenne pepper, salt, and pepper. Mix well to make the marinade.
- Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked skewers.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
