Chuukese Coconut Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 cup coconut milk
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine coconut milk, garlic, ginger, soy sauce, brown sugar, lime juice, cumin, turmeric, cayenne pepper, salt, and pepper. Mix well to make the marinade.
  2. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked skewers.
  4. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
