Chwee Kueh Carnival

Ingredients

  • 1 cup rice flour
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1 cup preserved radish (Chai poh)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 cup chopped spring onions
  • 1/4 cup fried shallots
  • Chili sauce, to taste

Instructions

  1. In a bowl, mix the rice flour, water, and salt to make the Chwee Kueh batter.
  2. Pour the batter into small greased bowls and steam for 15 minutes until set.
  3. While the rice cakes are steaming, heat the vegetable oil in a pan and sauté the garlic until fragrant.
  4. Add the preserved radish, soy sauce, and sugar to the pan, and stir-fry for 5 minutes.
  5. Remove the steamed rice cakes from the bowls and top with the preserved radish mixture, chopped spring onions, fried shallots, and chili sauce.
