Cielito Lindo is a traditional Mexican dish that translates to "beautiful little sky." This recipe features tender chicken simmered in a rich and flavorful sauce, perfect for serving with rice or warm tortillas.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, heat oil over medium heat. Add the chicken and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the onion and garlic. Cook until softened.
- Stir in the diced tomatoes, green chilies, cumin, and chili powder. Season with salt and pepper.
- Return the chicken to the skillet and simmer for 20 minutes, or until the chicken is cooked through.
- Sprinkle with fresh cilantro before serving.
