Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large skillet, heat oil over medium heat. Add the chicken and cook until browned on both sides. Remove from the skillet and set aside.
  2. In the same skillet, add the onion and garlic. Cook until softened.
  3. Stir in the diced tomatoes, green chilies, cumin, and chili powder. Season with salt and pepper.
  4. Return the chicken to the skillet and simmer for 20 minutes, or until the chicken is cooked through.
  5. Sprinkle with fresh cilantro before serving.
