Cilcennin Cauliflower Cheese
Cilcennin Cauliflower Cheese is a classic dish from the Ceredigion region of Wales. This creamy and cheesy cauliflower bake is a comforting and delicious side dish that pairs perfectly with a variety of main courses.
Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and place in a greased baking dish.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk, stirring constantly until the sauce thickens.
- Remove the sauce from the heat and stir in 1 cup of the shredded cheddar cheese until melted. Season with salt and pepper.
- Pour the cheese sauce over the cauliflower in the baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
