Cilcennin Cauliflower Cheese

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and place in a greased baking dish.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens.
  5. Remove the sauce from the heat and stir in 1 cup of the shredded cheddar cheese until melted. Season with salt and pepper.
  6. Pour the cheese sauce over the cauliflower in the baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Serve hot and enjoy!
