Cilcennin Chicken Curry

Ingredients

  • 4 boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons sugar
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent.
  2. Add the curry powder, turmeric, cumin, and coriander to the pot. Stir well to coat the onion mixture with the spices.
  3. Add the chicken cubes to the pot and cook until they are browned on all sides.
  4. Pour in the coconut milk, chicken broth, and tomato paste. Stir to combine all the ingredients.
  5. Bring the curry to a simmer, then reduce the heat and let it cook for 30 minutes, stirring occasionally.
  6. Stir in the sugar, salt, and pepper. Taste and adjust the seasoning if needed.
  7. Serve the Cilcennin Chicken Curry over steamed rice, garnished with chopped cilantro.
