Ingredients
- 4 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 2 teaspoons sugar
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent.
- Add the curry powder, turmeric, cumin, and coriander to the pot. Stir well to coat the onion mixture with the spices.
- Add the chicken cubes to the pot and cook until they are browned on all sides.
- Pour in the coconut milk, chicken broth, and tomato paste. Stir to combine all the ingredients.
- Bring the curry to a simmer, then reduce the heat and let it cook for 30 minutes, stirring occasionally.
- Stir in the sugar, salt, and pepper. Taste and adjust the seasoning if needed.
- Serve the Cilcennin Chicken Curry over steamed rice, garnished with chopped cilantro.
