Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 stalks lemongrass, finely chopped

  • 1 teaspoon turmeric powder
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together lemongrass, garlic, shallot, turmeric powder, fish sauce, soy sauce, and vegetable oil to create a marinade.
  2. Season the chicken thighs with salt and pepper, then coat them with the marinade. Let the chicken marinate for at least 15 minutes.
  3. Heat a skillet over medium heat and add the marinated chicken thighs, skin side down. Cook for 10-12 minutes on each side until the chicken is golden brown and cooked through.
