Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 stalks lemongrass, finely chopped

- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix together lemongrass, garlic, shallot, turmeric powder, fish sauce, soy sauce, and vegetable oil to create a marinade.
- Season the chicken thighs with salt and pepper, then coat them with the marinade. Let the chicken marinate for at least 15 minutes.
- Heat a skillet over medium heat and add the marinated chicken thighs, skin side down. Cook for 10-12 minutes on each side until the chicken is golden brown and cooked through.
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before serving.
