Ingredients

  • 1 pound lamb, cut into cubes
  • 3 stalks lemongrass, white parts only, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the lemongrass, garlic, fish sauce, soy sauce, brown sugar, turmeric, cumin, coriander, chili powder, and salt to make the marinade.
  2. Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Thread the marinated lamb cubes onto the soaked skewers.
  4. Heat a grill pan or stovetop grill over medium-high heat. Cook the skewers for 3-4 minutes on each side, or until the lamb is cooked to your desired doneness.
  5. Remove from the heat and let the skewers rest for a few minutes before serving.
