Cin Kyan Kyaw, or Fragrant Lemongrass Lamb Skewers, is a popular dish in Burmese Chinese cuisine, known for its aromatic and flavorful combination of lemongrass and tender lamb.
Ingredients
- 1 pound lamb, cut into cubes
- 3 stalks lemongrass, white parts only, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- Salt to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the lemongrass, garlic, fish sauce, soy sauce, brown sugar, turmeric, cumin, coriander, chili powder, and salt to make the marinade.
- Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Thread the marinated lamb cubes onto the soaked skewers.
- Heat a grill pan or stovetop grill over medium-high heat. Cook the skewers for 3-4 minutes on each side, or until the lamb is cooked to your desired doneness.
- Remove from the heat and let the skewers rest for a few minutes before serving.
