Ingredients

  • 1 block of firm tofu, cubed
  • 2 stalks of lemongrass, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  3. Add the minced lemongrass and garlic, and stir fry for 1-2 minutes until fragrant.
  4. Add the tofu cubes and stir fry for 5-6 minutes until golden brown.
  5. Add the sliced bell peppers and onion, and continue stir frying for another 3-4 minutes.
  6. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and black pepper.
  7. Pour the sauce over the stir fry and toss to coat everything evenly.
  8. Remove from heat and garnish with fresh cilantro.
