Cinnamon Roll Cheesecake

Ingredients
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, sour cream, and flour until well combined.
- Pour half of the cream cheese mixture over the crust in the pan.
- In a small bowl, mix together the melted butter, brown sugar, and cinnamon. Drizzle half of the cinnamon mixture over the cream cheese layer. Swirl with a knife.
- Repeat with the remaining cream cheese mixture and cinnamon mixture.
- Bake in the preheated oven for 45-50 minutes, or until the center is almost set.
- Allow the cheesecake to cool in the pan on a wire rack for 10 minutes. Then run a knife around the edge of the pan to loosen; cool 1 hour longer.
- Refrigerate overnight, covering once completely cooled.
