Ciorba De Dovleac (creamy Pumpkin Soup)

Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion until translucent.
- Add the diced pumpkin, carrots, and potatoes to the pot and cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth.
