Ciorba De Linte (aromanian Lentil Soup)
Ciorba de linte is a traditional Aromanian lentil soup that is both hearty and nutritious. This comforting soup is perfect for a cozy meal on a cold day.
Ingredients
- 2 cups dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the lentils, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the lentils are tender.
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
