Ingredients

  • 2 cups dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the lentils, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the lentils are tender.
  4. Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
