Ingredients

  • 3 tomatoes, chopped
  • 1/4 cup rice
  • 2 bay leaves
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the fish fillets, onion, carrots, potatoes, bell pepper, tomatoes, rice, and bay leaves to the pot.
  3. Simmer for 45 minutes, or until the vegetables are tender and the fish is cooked through.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh parsley before serving.
