Ingredients
- 1 lb fish fillets, such as carp or trout
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 1 bell pepper, chopped
- 3 tomatoes, chopped
- 1/4 cup rice
- 2 bay leaves
- 6 cups water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, bring the water to a boil.
- Add the fish fillets, onion, carrots, potatoes, bell pepper, tomatoes, rice, and bay leaves to the pot.
- Simmer for 45 minutes, or until the vegetables are tender and the fish is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
