Ingredients

  • 1 lb mixed organ meats (chicken hearts, liver, gizzards)
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1 celery stalk, chopped
  • 1 bell pepper, chopped
  • 1 cup tomato puree
  • 1/4 cup rice
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil and add the mixed organ meats. Cook for 10 minutes, then remove the meats and set aside.
  2. In the same pot, sauté the onion, carrots, celery, and bell pepper until softened.
  3. Add the tomato puree, potatoes, and rice to the pot. Stir well.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat and simmer for 1 hour.
  5. Return the cooked organ meats to the pot and simmer for an additional 30 minutes.
  6. Season with salt and pepper to taste before serving.
