Ciorba De Potroace (grandma's Secret Stew)
Ciorba de potroace, also known as Grandma's Secret Stew, is a traditional Aromanian dish that is hearty, flavorful, and perfect for a cozy family dinner.
Ingredients
- 1 lb mixed organ meats (chicken hearts, liver, gizzards)
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 1 celery stalk, chopped
- 1 bell pepper, chopped
- 1 cup tomato puree
- 1/4 cup rice
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil and add the mixed organ meats. Cook for 10 minutes, then remove the meats and set aside.
- In the same pot, sauté the onion, carrots, celery, and bell pepper until softened.
- Add the tomato puree, potatoes, and rice to the pot. Stir well.
- Pour in the water and bring the mixture to a boil. Reduce the heat and simmer for 1 hour.
- Return the cooked organ meats to the pot and simmer for an additional 30 minutes.
- Season with salt and pepper to taste before serving.
