Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 parsnip, sliced
- 1 bell pepper, chopped
- 3 potatoes, diced
- 1/2 cup rice
- 1/4 cup fresh parsley, chopped
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the chicken pieces, onions, carrots, celery, parsnip, and bell pepper to the pot. Simmer for 30 minutes.
- Add the potatoes and rice to the pot. Simmer for an additional 20 minutes, or until the chicken is cooked through and the vegetables are tender.
