Citrusy Lemon Rice (shatkora Bhaat)

Ingredients

  • 2 cups Basmati rice
  • 1 shatkora, peeled and sliced
  • 1 lemon, juiced
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash the rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pot and add mustard seeds. Once they start to pop, add the green chilies and sliced shatkora. Sauté for 2-3 minutes.
  3. Stir in the turmeric powder and salt. Cook for another 2 minutes.
  4. Add the drained rice to the pot and sauté for 2-3 minutes.
  5. Pour in the water and lemon juice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  6. Fluff the rice with a fork and serve hot.
