Citrusy Lemon Rice (shatkora Bhaat)
Citrusy Lemon Rice (Shatkora Bhaat) is a traditional dish from Sylheti Cuisine that is bursting with tangy flavors. This aromatic rice dish is infused with the unique citrusy flavor of shatkora, a native citrus fruit of Bangladesh.
Ingredients
- 2 cups Basmati rice
- 1 shatkora, peeled and sliced
- 1 lemon, juiced
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- Salt to taste
- 4 cups water
Instructions
- Wash the rice and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a large pot and add mustard seeds. Once they start to pop, add the green chilies and sliced shatkora. Sauté for 2-3 minutes.
- Stir in the turmeric powder and salt. Cook for another 2 minutes.
- Add the drained rice to the pot and sauté for 2-3 minutes.
- Pour in the water and lemon juice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and serve hot.
