Ingredients

  • 2 large potatoes, peeled and diced
  • 1 cup cauliflower florets
  • 1 cup carrots, diced
  • 1 shatkora, peeled and chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons mustard oil

Instructions

  1. Boil the potatoes, cauliflower, and carrots until tender. Drain and set aside.
  2. In a pan, heat the mustard oil and add the chopped shatkora. Cook until the shatkora is soft and slightly caramelized.
  3. Add the boiled vegetables to the pan and mash them with the cooked shatkora.
  4. Add turmeric, cumin powder, red chili powder, and salt to the mashed vegetables. Mix well to combine all the flavors.
  5. Transfer the mashed vegetables to a serving dish and serve hot.
