Citrusy Mashed Vegetables (shatkora Bhorta)

Ingredients
- 2 large potatoes, peeled and diced
- 1 cup cauliflower florets
- 1 cup carrots, diced
- 1 shatkora, peeled and chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons mustard oil
Instructions
- Boil the potatoes, cauliflower, and carrots until tender. Drain and set aside.
- In a pan, heat the mustard oil and add the chopped shatkora. Cook until the shatkora is soft and slightly caramelized.
- Add the boiled vegetables to the pan and mash them with the cooked shatkora.
- Add turmeric, cumin powder, red chili powder, and salt to the mashed vegetables. Mix well to combine all the flavors.
- Transfer the mashed vegetables to a serving dish and serve hot.
