Citrusy Rice Pilaf With Meat (shatkora Biryani)
This Citrusy Rice Pilaf with Meat, also known as Shatkora Biryani, is a flavorful and aromatic dish from Sylheti Cuisine. The combination of citrusy shatkora fruit with fragrant rice and tender meat makes this dish a true delight for the senses.
Ingredients
- 2 cups basmati rice
- 1 lb meat (chicken, lamb, or beef), cut into pieces
- 1 shatkora fruit, sliced
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1/2 cup plain yogurt
- 2 teaspoons biryani masala
- 1 teaspoon turmeric
- 1 teaspoon red chili powder
- 1/4 cup vegetable oil
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the meat pieces to the pot and cook until browned on all sides.
- Stir in the minced garlic, grated ginger, biryani masala, turmeric, and red chili powder. Cook for 2-3 minutes.
- Add the plain yogurt and shatkora slices to the pot. Cook for another 5 minutes.
- Layer the soaked rice over the meat and shatkora mixture. Pour the water over the rice.
- Cover the pot and cook on low heat for 20-25 minutes, or until the rice and meat are fully cooked.
- Once done, fluff the rice with a fork and serve hot.
