Ciuperci Umplute (romanian Stuffed Mushrooms)
Ciuperci Umplute, or Romanian Stuffed Mushrooms, are a delicious appetizer or side dish that is popular in Romanian cuisine. These savory stuffed mushrooms are filled with a flavorful mixture of ingredients and are sure to be a hit at any gathering.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the mushroom stems and set aside.
- Heat the olive oil in a pan over medium heat. Add the chopped onion and mushroom stems, and cook until softened.
- Add the garlic and cook for an additional 1-2 minutes.
- Remove the pan from the heat and stir in the breadcrumbs, Parmesan cheese, and parsley. Season with salt and pepper.
- Spoon the filling into the mushroom caps and place them on a baking sheet.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve hot and enjoy!
