Ingredients

  • 12 large mushrooms, stems removed and reserved

  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and set aside.
  3. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the chopped mushroom stems to the skillet and cook for 5 minutes.
  5. Remove the skillet from the heat and stir in the breadcrumbs, Parmesan cheese, and parsley. Season with salt and pepper.
  6. Spoon the filling into the mushroom caps and place them on a baking sheet.
  7. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
