Ingredients

  • 500g chicken thighs, cut into pieces

  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 1 red chili, sliced (optional)
  • 1 tablespoon cooking oil
  • 1 cup chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. In a bowl, marinate the chicken pieces with soy sauce, oyster sauce, sugar, sesame oil, and white pepper for 15 minutes.
  2. Heat the claypot over medium heat and add cooking oil. Sauté garlic, ginger, green onions, and red chili until fragrant.
  3. Add the marinated chicken pieces and stir-fry for 5 minutes.
  4. Pour in the chicken broth and bring to a simmer. Cover and cook for 20 minutes.
  5. Uncover the claypot, stir in the cornstarch mixture, and cook for another 5 minutes until the sauce thickens.
