Claypot Chicken Rice (砂煲鸡饭)

Ingredients

  • 2 cups jasmine rice, rinsed
  • 4 chicken thighs, cut into bite-sized pieces
  • 4 Chinese sausages, sliced
  • 4 shiitake mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 1/2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped

Instructions

  1. In a bowl, marinate the chicken with soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper. Set aside for 15 minutes.
  2. In a claypot, layer the marinated chicken, Chinese sausage, shiitake mushrooms, garlic, and ginger.
  3. Add the rinsed jasmine rice on top of the chicken and spread it out evenly.
  4. Pour the chicken broth over the rice and chicken mixture.
  5. Cover the claypot and cook over medium heat for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  6. Once cooked, garnish with chopped green onions before serving.
