砂煲鸡饭 (Claypot Chicken Rice) is a popular Malaysian Chinese dish that features tender chicken, flavorful rice, and savory Chinese sausage, all cooked together in a claypot to create a delicious one-pot meal.
Ingredients
- 2 cups jasmine rice, rinsed
- 4 chicken thighs, cut into bite-sized pieces
- 4 Chinese sausages, sliced
- 4 shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 1/2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 2 green onions, chopped
Instructions
- In a bowl, marinate the chicken with soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper. Set aside for 15 minutes.
- In a claypot, layer the marinated chicken, Chinese sausage, shiitake mushrooms, garlic, and ginger.
- Add the rinsed jasmine rice on top of the chicken and spread it out evenly.
- Pour the chicken broth over the rice and chicken mixture.
- Cover the claypot and cook over medium heat for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Once cooked, garnish with chopped green onions before serving.
