Claypot Chicken Rice Delight
Claypot Chicken Rice is a popular one-pot dish in Singaporean Chinese cuisine, featuring tender chicken, flavorful rice, and savory Chinese sausage.
Ingredients
- 2 cups jasmine rice
- 4 chicken thighs, bone-in, skin-on
- 4 Chinese sausages, sliced
- 4 shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 3 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 2 stalks green onions, chopped
Instructions
- Rinse the jasmine rice and place it in the claypot.
- Arrange the chicken thighs, Chinese sausages, and shiitake mushrooms on top of the rice.
- In a bowl, mix the minced garlic, julienned ginger, chicken broth, soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper. Pour this mixture over the chicken and rice in the claypot.
- Cover the claypot and cook over medium heat for 25-30 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with chopped green onions before serving.
