Claypot Tofu (砂煲豆腐)

Ingredients

  • 1 block of firm tofu, cubed
  • 6 shiitake mushrooms, sliced
  • 1 small carrot, julienned
  • 1/2 cup snow peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, julienned
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 cup vegetable broth
  • 1 tablespoon cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a claypot over medium heat.
  2. Add the garlic, ginger, and green onions, and stir-fry until fragrant.
  3. Add the tofu, mushrooms, carrot, and snow peas to the claypot.
  4. In a small bowl, mix the soy sauce, oyster sauce, sesame oil, and cornstarch with vegetable broth. Pour the mixture into the claypot.
  5. Season with salt and pepper, then cover and simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
  6. Serve hot with steamed rice.
