砂煲豆腐 (Claypot Tofu) is a classic Malaysian Chinese dish that features silky tofu, mushrooms, and other flavorful ingredients cooked in a claypot to create a delicious and comforting meal.
Ingredients
- 1 block of firm tofu, cubed
- 6 shiitake mushrooms, sliced
- 1 small carrot, julienned
- 1/2 cup snow peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, julienned
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 cup vegetable broth
- 1 tablespoon cooking oil
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a claypot over medium heat.
- Add the garlic, ginger, and green onions, and stir-fry until fragrant.
- Add the tofu, mushrooms, carrot, and snow peas to the claypot.
- In a small bowl, mix the soy sauce, oyster sauce, sesame oil, and cornstarch with vegetable broth. Pour the mixture into the claypot.
- Season with salt and pepper, then cover and simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- Serve hot with steamed rice.
