Ingredients

  • 2 lbs whole fish (such as red snapper or grouper), cleaned and scaled
  • 2 cups rice
  • 2 onions, sliced
  • 4 tomatoes, chopped
  • 1 cup tomato paste
  • 4 carrots, peeled and sliced
  • 2 eggplants, sliced
  • 4 hot peppers, pierced
  • 1 cup peanut oil
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. Season the fish with salt and pepper, then set aside.
  2. In a large pot, heat the peanut oil over medium heat. Add the sliced onions and cook until softened.
  3. Add the chopped tomatoes, tomato paste, and hot peppers to the pot. Cook for 10 minutes, stirring occasionally.
  4. Add the fish to the pot and pour in the water. Bring to a simmer and cook for 20 minutes.
  5. Remove the fish from the pot and set aside. Add the carrots and eggplants to the pot and cook for 15 minutes.
  6. Stir in the rice and cook for an additional 10 minutes, adding more water if needed.
  7. Return the fish to the pot and cook for 10 more minutes, or until the rice is tender and the fish is fully cooked.
  8. Adjust the seasoning with salt and pepper, then serve the Thiébou Kethiakh hot.
