Coastal Carnival (Thiébou Kethiakh)

Ingredients
- 2 lbs whole fish (such as red snapper or grouper), cleaned and scaled
- 2 cups rice
- 2 onions, sliced
- 4 tomatoes, chopped
- 1 cup tomato paste
- 4 carrots, peeled and sliced
- 2 eggplants, sliced
- 4 hot peppers, pierced
- 1 cup peanut oil
- 4 cups water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the peanut oil over medium heat. Add the sliced onions and cook until softened.
- Add the chopped tomatoes, tomato paste, and hot peppers to the pot. Cook for 10 minutes, stirring occasionally.
- Add the fish to the pot and pour in the water. Bring to a simmer and cook for 20 minutes.
- Remove the fish from the pot and set aside. Add the carrots and eggplants to the pot and cook for 15 minutes.
- Stir in the rice and cook for an additional 10 minutes, adding more water if needed.
- Return the fish to the pot and cook for 10 more minutes, or until the rice is tender and the fish is fully cooked.
- Adjust the seasoning with salt and pepper, then serve the Thiébou Kethiakh hot.
