Coastal Carnival (Thiébou Ndar Lamb)

Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups rice
- 1 large onion, chopped
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1 cabbage, cut into wedges
- 4 cups water
- 1/4 cup vegetable oil
- 1/4 cup tomato paste
- 1 scotch bonnet pepper, whole
- 1 tsp thyme
- 1 tsp ground ginger
- Salt and pepper to taste
Instructions
- Season the lamb chunks with salt, pepper, thyme, and ground ginger.
- In a large pot, heat the vegetable oil over medium heat and brown the seasoned lamb chunks.
- Add the chopped onion and diced tomatoes to the pot, and cook until the onions are translucent.
- Stir in the tomato paste and add the water, then bring to a simmer.
- Add the rice, eggplant, carrots, cabbage, and whole scotch bonnet pepper to the pot, and gently stir to combine.
- Cover the pot and let the Thiébou Ndar simmer for 30-40 minutes, or until the rice is tender and the lamb is cooked through.
- Adjust seasoning with salt and pepper, then serve the Thiébou Ndar hot, with the vegetables and lamb arranged on top of the rice.
