Coastal Carnival (Thiébou Ndar Lamb)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups rice
  • 1 large onion, chopped
  • 3 tomatoes, diced
  • 1 eggplant, sliced
  • 2 carrots, sliced
  • 1 cabbage, cut into wedges
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1/4 cup tomato paste
  • 1 scotch bonnet pepper, whole
  • 1 tsp thyme
  • 1 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Season the lamb chunks with salt, pepper, thyme, and ground ginger.
  2. In a large pot, heat the vegetable oil over medium heat and brown the seasoned lamb chunks.
  3. Add the chopped onion and diced tomatoes to the pot, and cook until the onions are translucent.
  4. Stir in the tomato paste and add the water, then bring to a simmer.
  5. Add the rice, eggplant, carrots, cabbage, and whole scotch bonnet pepper to the pot, and gently stir to combine.
  6. Cover the pot and let the Thiébou Ndar simmer for 30-40 minutes, or until the rice is tender and the lamb is cooked through.
  7. Adjust seasoning with salt and pepper, then serve the Thiébou Ndar hot, with the vegetables and lamb arranged on top of the rice.
