Coastal Celebration (Thiébou Ndar Tiga)
Thiébou Ndar Tiga, also known as Coastal Celebration, is a flavorful and aromatic Senegalese fish and rice dish that is perfect for special occasions and gatherings.
Ingredients
- 1 whole fish (such as red snapper or sea bream), cleaned and scaled
- 2 cups of rice
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 carrot, sliced
- 1 eggplant, sliced
- 1/4 cup of tomato paste
- 1 scotch bonnet pepper, whole
- 1/4 cup of vegetable oil
- 2 garlic cloves, minced
- 1 tbsp of parsley, chopped
- 1 tbsp of thyme
- 1 tbsp of ground red pepper
- 4 cups of water
- Salt to taste
Instructions
- Season the fish with salt and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and tomatoes. Cook until the onions are translucent.
- Stir in the tomato paste, thyme, and ground red pepper. Cook for 5 minutes.
- Add the fish, carrot, eggplant, scotch bonnet pepper, and water. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Remove the fish from the pot and set aside.
- Add the rice to the pot, stirring to combine with the sauce. Arrange the fish on top of the rice.
- Cover the pot and cook for 20-25 minutes, or until the rice is tender and the fish is fully cooked.
- Sprinkle with chopped parsley before serving.
