Ingredients
- 2 lb pork shoulder, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups apple cider
- 1 cup chicken broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the pork chunks with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Brown the pork on all sides, then remove from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
- Pour in the apple cider and chicken broth, then return the pork to the pot. Add the bay leaves.
- Bring the liquid to a simmer, then reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the pork is tender.
- Once the pork is tender, remove it from the pot and let the sauce simmer and reduce for a few minutes until slightly thickened.
- Return the pork to the pot and coat it with the sauce. Adjust the seasoning if needed.
- Serve the Cochinillo a la Sidra hot, accompanied by your favorite side dishes.
