Ingredients

  • 2 lb pork shoulder, cut into chunks
  • 2 tbsp olive oil

  • 2 cups apple cider
  • 1 cup chicken broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the pork chunks with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Brown the pork on all sides, then remove from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Pour in the apple cider and chicken broth, then return the pork to the pot. Add the bay leaves.
  5. Bring the liquid to a simmer, then reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the pork is tender.
  6. Once the pork is tender, remove it from the pot and let the sauce simmer and reduce for a few minutes until slightly thickened.
  7. Return the pork to the pot and coat it with the sauce. Adjust the seasoning if needed.
