Ingredients

  • 1 lb beef shank
  • 1 lb pork ribs
  • 1 lb chickpeas
  • 2 chorizo sausages
  • 2 potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place the beef shank and pork ribs in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Add the chickpeas, chorizo sausages, potatoes, carrots, onion, garlic, and bay leaf to the pot. Season with salt and pepper.
  3. Continue to simmer for another hour, or until the meat is tender and the chickpeas are cooked through.
  4. Remove the bay leaf and serve the cocido hot in bowls.
