Ingredients

  • 1 lb (450g) chorizo sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 6 cups (1.5 liters) chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chorizo over medium heat until browned. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Stir in the potatoes, chicken broth, smoked paprika, and season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Return the cooked chorizo to the pot and simmer for an additional 15 minutes.
  5. Adjust seasoning if needed and serve hot.
