Cocido Castellano is a traditional Spanish stew hailing from the Castilian-Manchego region. This hearty and flavorful dish is perfect for warming up on a chilly day.
Ingredients
- 1 lb (450g) chorizo sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 6 cups (1.5 liters) chicken broth
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook the chorizo over medium heat until browned. Remove and set aside.
- Add the onion and garlic to the pot and sauté until softened.
- Stir in the potatoes, chicken broth, smoked paprika, and season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Return the cooked chorizo to the pot and simmer for an additional 15 minutes.
- Adjust seasoning if needed and serve hot.
