Coconut And Lemongrass Beef Stir-fry

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 lemongrass stalks, finely chopped
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1 can (14 oz) coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the soy sauce, fish sauce, brown sugar, garlic, and ginger. Add the sliced beef and marinate for 10 minutes.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the lemongrass and stir-fry for 1 minute until fragrant.
  3. Add the marinated beef to the pan and stir-fry for 3-4 minutes until browned.
  4. Pour in the coconut milk and bring to a simmer. Add the bell pepper and snow peas, and cook for another 3-4 minutes until the vegetables are tender-crisp.
  5. Season with salt and pepper to taste. Serve the stir-fry hot over steamed rice.
