Coconut And Lemongrass Beef Stir-fry
This Coconut and Lemongrass Beef Stir-Fry is a flavorful and aromatic dish that brings the taste of Christmas Island to your table.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 lemongrass stalks, finely chopped
- 1 red bell pepper, sliced
- 1 cup snow peas
- 1 can (14 oz) coconut milk
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix together the soy sauce, fish sauce, brown sugar, garlic, and ginger. Add the sliced beef and marinate for 10 minutes.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the lemongrass and stir-fry for 1 minute until fragrant.
- Add the marinated beef to the pan and stir-fry for 3-4 minutes until browned.
- Pour in the coconut milk and bring to a simmer. Add the bell pepper and snow peas, and cook for another 3-4 minutes until the vegetables are tender-crisp.
- Season with salt and pepper to taste. Serve the stir-fry hot over steamed rice.
