Coconut And Lime Beef Rendang

Ingredients

  • 1.5 lbs beef, cut into chunks
  • 2 cans coconut milk
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 inch ginger, grated
  • 3 red chilies, sliced
  • 1 tbsp tamarind paste
  • 2 tbsp brown sugar
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. In a large pot, combine the coconut milk, onion, garlic, lemongrass, kaffir lime leaves, ginger, chilies, tamarind paste, and brown sugar. Bring to a simmer over medium heat.
  2. Add the beef chunks to the pot and stir to combine. Cover and simmer over low heat for 1.5 hours, stirring occasionally.
  3. Uncover the pot and continue to simmer for another 30 minutes, or until the beef is tender and the sauce has thickened.
  4. Stir in the lime juice and season with salt to taste. Remove the lemongrass and kaffir lime leaves before serving.
