Ingredients
- 1.5 lbs beef, cut into chunks
- 2 cans coconut milk
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 1 inch ginger, grated
- 3 red chilies, sliced
- 1 tbsp tamarind paste
- 2 tbsp brown sugar
- Juice of 2 limes
- Salt to taste
Instructions
- In a large pot, combine the coconut milk, onion, garlic, lemongrass, kaffir lime leaves, ginger, chilies, tamarind paste, and brown sugar. Bring to a simmer over medium heat.
- Add the beef chunks to the pot and stir to combine. Cover and simmer over low heat for 1.5 hours, stirring occasionally.
- Uncover the pot and continue to simmer for another 30 minutes, or until the beef is tender and the sauce has thickened.
- Stir in the lime juice and season with salt to taste. Remove the lemongrass and kaffir lime leaves before serving.
