Ingredients

  • 1.5 lbs chicken thighs, cut into chunks
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the chicken chunks to the pot and cook until browned on all sides.
