This Coconut and Lime Chicken Curry is a delicious and aromatic dish from Nauruan cuisine, combining the flavors of coconut, lime, and traditional spices.
Ingredients
- 1.5 lbs chicken thighs, cut into chunks
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
