Coconut and Lime Chicken (Frango com Coco e Limão)

Ingredients
- 4 chicken thighs
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the coconut milk, lime juice, lime zest, minced garlic, and chopped onion. Season with salt and pepper.
- Add the chicken thighs to the marinade and let them marinate for at least 30 minutes in the refrigerator.
- Heat the olive oil in a large skillet over medium heat. Remove the chicken from the marinade and place them in the skillet.
- Cook the chicken for about 7-8 minutes on each side, or until fully cooked and golden brown.
- Pour the remaining marinade into the skillet and let it simmer for 10-15 minutes, until the sauce thickens.
- Serve the chicken with the coconut and lime sauce, garnished with additional lime zest if desired.
