Coconut and Lime Chicken (Frango com Coco e Limão)

Ingredients

  • 4 chicken thighs
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the coconut milk, lime juice, lime zest, minced garlic, and chopped onion. Season with salt and pepper.
  2. Add the chicken thighs to the marinade and let them marinate for at least 30 minutes in the refrigerator.
  3. Heat the olive oil in a large skillet over medium heat. Remove the chicken from the marinade and place them in the skillet.

  5. Pour the remaining marinade into the skillet and let it simmer for 10-15 minutes, until the sauce thickens.
