Coconut and Lime Chicken Skewers (Brochettes de Poulet à la Noix de Coco et au Citron Vert)

Ingredients

  • 1.5 lbs (700g) chicken breast, cut into cubes
  • 1 cup (240ml) coconut milk
  • 3 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a bowl, combine the coconut milk, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken cubes onto the skewers.
  5. Heat a grill pan or skillet over medium-high heat. Cook the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
  6. Serve the Coconut and Lime Chicken Skewers hot, garnished with fresh lime wedges and chopped cilantro if desired.
