Ingredients
- 1.5 lbs (700g) chicken breast, cut into cubes
- 1 cup (240ml) coconut milk
- 3 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a bowl, combine the coconut milk, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken cubes onto the skewers.
- Heat a grill pan or skillet over medium-high heat. Cook the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
