Ingredients
- 4 boneless, skinless chicken breasts, sliced
- 1 cup coconut milk
- 2 limes, juiced and zested
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup snow peas
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, combine the coconut milk, lime juice and zest, soy sauce, fish sauce, and brown sugar. Set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and onion, and stir-fry for 2 minutes.
- Add the chicken slices to the pan and cook until browned and cooked through.
- Pour the coconut milk mixture over the chicken and add the bell pepper and snow peas. Stir-fry for an additional 5 minutes, or until the vegetables are tender-crisp.
- Season with salt and pepper to taste.
- Serve the Kokonas na Lime Sikin Stir-Frai hot, garnished with fresh cilantro and additional lime wedges if desired.
