Coconut and Lime Chicken Stir-Fry (Kokonas na Lime Sikin Stir-Frai)

Ingredients

  • 4 boneless, skinless chicken breasts, sliced
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup snow peas
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the coconut milk, lime juice and zest, soy sauce, fish sauce, and brown sugar. Set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and onion, and stir-fry for 2 minutes.
  3. Add the chicken slices to the pan and cook until browned and cooked through.
  4. Pour the coconut milk mixture over the chicken and add the bell pepper and snow peas. Stir-fry for an additional 5 minutes, or until the vegetables are tender-crisp.
  5. Season with salt and pepper to taste.
  6. Serve the Kokonas na Lime Sikin Stir-Frai hot, garnished with fresh cilantro and additional lime wedges if desired.
