Ingredients
- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup coconut milk
- 1/4 cup coconut oil
- 2 eggs
- Zest of 2 limes
- Juice of 1 lime
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, shredded coconut, sugar, baking powder, and salt.
- In a separate bowl, whisk together the coconut milk, coconut oil, eggs, lime zest, and lime juice.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
