Ingredients

  • 2 cups all-purpose flour
  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 2 tsp baking powder

  • 1 cup coconut milk
  • 1/4 cup coconut oil
  • 2 eggs
  • Zest of 2 limes
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, shredded coconut, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the coconut milk, coconut oil, eggs, lime zest, and lime juice.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
