Ingredients
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1/4 cup shredded coconut
- 2 tablespoons sugar
- 1 egg
- 1 lime (zested and juiced)
- 1/4 teaspoon salt
- 2 tablespoons butter (for cooking)
Instructions
- In a large bowl, whisk together the flour, coconut milk, shredded coconut, sugar, egg, lime zest, and salt until smooth.
- Heat a non-stick pan over medium heat and add a small amount of butter to coat the bottom.
- Pour 1/4 cup of batter into the pan and swirl to spread evenly. Cook for 2 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more butter to the pan as needed.
- Serve the crêpes warm, drizzled with fresh lime juice and extra shredded coconut if desired.
