Coconut And Lime Prawn Skewers

Ingredients

  • 500g large prawns, peeled and deveined
  • 1/2 cup coconut milk
  • 2 limes, juiced and zested
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the coconut milk, lime juice and zest, garlic, cilantro, cumin, salt, and pepper. Mix well to create the marinade.
  2. Add the prawns to the marinade and toss to coat. Let them marinate for 15 minutes.
  3. Thread the marinated prawns onto the soaked wooden skewers.
  4. Heat a stovetop grill or grill pan over medium-high heat. Grill the prawn skewers for 2-3 minutes on each side, or until they are cooked through and have a nice char.
