These Coconut and Lime Prawn Skewers are a delightful Mauritian dish that brings together the flavors of coconut and lime with succulent prawns. Perfect for a summer barbecue or a special dinner, these skewers are sure to impress your guests.
Ingredients
- 500g large prawns, peeled and deveined
- 1/2 cup coconut milk
- 2 limes, juiced and zested
- 2 cloves garlic, minced
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the coconut milk, lime juice and zest, garlic, cilantro, cumin, salt, and pepper. Mix well to create the marinade.
- Add the prawns to the marinade and toss to coat. Let them marinate for 15 minutes.
- Thread the marinated prawns onto the soaked wooden skewers.
- Heat a stovetop grill or grill pan over medium-high heat. Grill the prawn skewers for 2-3 minutes on each side, or until they are cooked through and have a nice char.
