Coconut and Lime Shrimp (Camarão com Coco e Limão)

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 cup (240ml) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red chili, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shrimp, lime juice, lime zest, and a pinch of salt. Let it marinate for 10 minutes.
  2. In a large pan, heat the olive oil over medium heat. Add the garlic, onion, and red chili. Sauté until the onion is translucent.
  3. Add the marinated shrimp to the pan and cook for 2-3 minutes on each side until they turn pink.
  4. Pour in the coconut milk and let the mixture simmer for 5 minutes, allowing the flavors to meld together.
  5. Season with salt and pepper to taste. Serve the Camarão com Coco e Limão hot, garnished with fresh cilantro if desired.
