Coconut And Lime Shrimp Stir-fry
This Coconut and Lime Shrimp Stir-Fry is a delicious and refreshing dish that brings the flavors of Christmas Island to your table. The combination of coconut and lime adds a tropical twist to the classic shrimp stir-fry.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1/2 cup coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
- Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Heat the remaining 1 tablespoon of coconut oil in the same skillet.
- Add the bell peppers, snow peas, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Pour in the coconut milk, lime juice, and lime zest. Stir to combine.
- Return the cooked shrimp to the skillet and toss to coat everything in the coconut-lime sauce.
- Season with salt and pepper to taste.
- Serve the coconut and lime shrimp stir-fry over cooked rice.
