Coconut And Lime Shrimp Stir-fry

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1/2 cup coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
  2. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Heat the remaining 1 tablespoon of coconut oil in the same skillet.
  4. Add the bell peppers, snow peas, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  5. Pour in the coconut milk, lime juice, and lime zest. Stir to combine.
  6. Return the cooked shrimp to the skillet and toss to coat everything in the coconut-lime sauce.
  7. Season with salt and pepper to taste.
  8. Serve the coconut and lime shrimp stir-fry over cooked rice.
